FWIW, you could right-click a dock folder in Tiger (without bringing the Finder forward) and then type to scroll directly to what you were looking for and then hit enter to launch (though I often just scrolled manually).

In Leopard on a 24" screen with grid view, my Applications folder only displays up to Q and has "42 more in Finder". Clearly I need to trim some apps but still. ;)
